Crispy Schnitzel Poke Bowl

Also loving some crispyness in your poke bowl? We got you with our Crispy Schnitzel! The crunch of the breading is in perfect contrast with the soft mango and creamy sriracha mayo.

What you need for 2 portions:

  • 1 tray Vegafit Crispy Schnitzel
  • 150 grams brown rice (we liked ours to be more healthy. Of course you can choose any rice you like)
  • 1 ripe mango
  • Half a cucumber
  • 100 grams radishes
  • 100 grams edamame beans
  • 100 grams shredded carrot
  • 40 grams mayonnaise
  • 10 grams sriracha sauce
  • 1 tablespoon of black sesame seeds

Preparation method:

Wash the rice a couple of times until the water becomes transparent. Cook the rice according to the package. Prepare the Crispy Schnitzels in the air fryer for 6 minutes on 180ﹾC. Boil the edamame beans in hot water for 4 minutes, so that they become cooked, but stay firm.

Peel the mango and cut the fruit in pieces of 1 cm. Cut the cucumber lengthwise 2 times in half, so that you have two lang quarters. Remove the flesh with a knife or a spoon. Cut the quarters one more time lengthwise, and cut the cucumber strips in small pieces. Wash the radishes and remove the top and bottom. Cut them in quarters.

Make the sriracha mayo by simply mix the mayonnaise and sriracha in a bowl.

When the Crispy Schnitzels are ready, cut them in bite-size pieces.

Time for plating! Start with dividing the rice between two plates. To make the poke bowls ‘instagrammable’, place different colors next to each other. For example mango next to the cucumber, then carrot, then edamame and then the radishes. Also good tip: squeeze the sriracha mayo over the poke bowl by using a piping bag with very small nozzle. Sprinkle the sesame seeds to finish.
