Caesar salad

We can appreciate a well-filled salad from time to time. Therefore, we proudly present our beloved Caesar salad, but with a twist. We fill this meal with pear, almonds, vegan parmesan and vegan aioli. For a savoury bite, we add pieces of crispy schnitzel. This tasty salad comes with nothing but benefits, as you can get it on the table in no time.

What you need for 2 portions:

  • 2 packages of crispy schnitzel
  • 150 g chickpeas
  • 1 pear
  • 30 g almonds
  • 2 handfuls of lettuce
  • 100 g cooked couscous
  • 3 tbsp vegan oil
  • 60 g parmesan

Preparation method:

  1. Preheat the oven to 180 degrees.
  2. Rinse the chickpeas and place them on a baking tray. Sprinkle with salt and pepper and place in the oven for 20 minutes.
  3. Prepare the VegaFit crispy schnitzel according to the instructions on the packet.
  4. Cut the pear into long slices.
  5. Divide the couscous and lettuce among the plates. Place the pear and schnitzel on top. Spread the Parmesan, aioli and chickpeas on top.
  6. Serve with the schnitzel and divide the parmesan over the plates.
