Spicy curry with carrot-pumpkin balls

What you need for 4 portions

  • 2 trays Vegafit Balls pumpkin-carrot
  • Basmati rice (for a healthier choice, use brown rice)
  • Red curry paste
  • 1 cauliflower
  • 400 ml of coconut milk
  • 1 red bell pepper
  • 1 chili pepper
  • 1 fresh coriander
  • 1 centimetre ginger
  • 1 onion
  • Salt and pepper
  • Olive oil

Preparation method

Cut the ginger, chili pepper and garlic in very small pieces, the onion in less smaller pieces and the bell pepper in 1 centimetre pieces. Heat some olive oil in a pan and fry the ginger, garlic and onion for a few minutes. Add the red curry paste and the coconut milk. Cut the red bell pepper and the cauliflower and add them to the curry. Let it simmer for 15 minutes.

Prepare the rice and fry the pumpkin-carrot balls according to the instructions on the package.

Divide the rice and the curry over four bowls. Top off with the pumpkin-carrot balls and fresh coriander. Enjoy!
