Schnitzel burger with spiced sweet potato slices from the oven
Recipe and photo by Eline Hagenberg (Instagram: _caffeline).
4 vegan Italian buns (look closely at the ingredients to see if they are vegan)
4 Vegafit Schnitzels
2 red onions
Few leafs of lettuce
Ingredients seasoned sweet potato slices:
2 large sweet potatoes
2 tablespoons olive oil
1 tablespoon cajun herbs
0.5 tablespoon smoked paprika powder
3 cloves of garlic
Preheat the oven to 220 degrees Celsius. Wash the sweet potatoes well, as they are not peeled in this recipe (this is how you get all the vitamins). Then cut the potatoes into slices about 0.5 centimeters thick. Place all the slices on a baking sheet with baking paper and sprinkle the oil and herbs over it. Then spread everything with your hands, so that each slice has about the same amount of oil and herbs. When the oven is hot, bake the sweet potato for 20 minutes. When the sweet potato has 8 minutes to go, remove the baking sheet from the oven and turn all the slices over. Sprinkle the sliced garlic over the potato slices. Finally, put the slices back in the oven to bake them for the last 7 minutes.
The moment you put the potato slices in the oven for the first time, you can already start cutting the ingredients for the schnitzel burger. Cut the tomato, cucumber, and avocado into slices, and the onions into rings. You can also open the sandwiches. The moment you turn the potatoes and add the garlic, you can also start baking the Vegafit Schnizels. Bake them crispy in about 4 minutes on each side, and place them on the sandwich together with the tomato, cucumber, avocado, onion, lettuce, and possibly some vegan mayonnaise.
Enjoy your meal!
