Mince Patty with perfectly roasted potatoes and a green vegetable salad with dressing

Requirements (4 people):
200 – 250 grams of potatoes per person
2 packs of Vegafit Mince Patty
150 grams of mixed salad of your choice
100 grams of green beans – cleaned, cut into small pieces and blanched
100 grams of broccoli – cut into small stems and blanched
1 tsp baking soda
Big dash of olive oil
Pepper and salt to taste
For the dressing:
6 tbsp lettuce or sunflower oil
2 tbsp soy sauce
1 tsp sesame oil
1 teaspoon agave syrup or maple syrup
Mix all the ingredients for the dressing well together.
Preparation method:
Preheat the oven to 200 degrees. Peel the potatoes and bring them to the boil with cold water. Once the water has reached the boiling point, add a teaspoon of salt and a teaspoon of baking soda (this fizzes a little). The baking soda will give the potatoes a perfect crispy crust.
In the meantime, bring a pan of water tot he boil and blanch the vegetables. Rinse with ice cold water and mix with the lettuce. Set aside.
Drain the potatoes as soon as you can easily pierce them with a fork. Sprinkle salt and pepper and a generous dash of olive oil over the potatoes and sprinkle carefully so that everything is well mixed. The potatoes should look rough and jagged at this point.
Roast the potatoes until they are nicely browned and crispy in about 45 minutes. Turn them over once in a while.
When the potatoes are almost ready, fry the Mince Patties for 2 minutes on each side in some oil or vegetable butter. Sprinkle with some pepper and if necessary, salt.
Serve together with the potatoes, the salad and the dressing.
