Marinated Schnitzel strips

 

Ingredients 2 persons:

  • 1 pack Vegafit Schnitzels
  • 1 white onion
  • 2 garlic cloves
  • 1 tsp cumin powder
  • 1 tsp turmeric
  • A bit of hot sauce / harissa
  • 1 pack organic rice
  • 2 sweet bell peppers
  • 1 leek
  • 1/2 cup of mung beans
  • Teriyaki sauce
  • Soy sauce
  • Sweet soy sauce

Directions:

Put the mung beans in a pan with a layer of water on medium high heat (the beans have to cook for 30 minutes). Put the rice in another pan with water and cook for 10 minutes. Cut the leek, bell pepper, onion and garlic in bite size pieces. Add the rice and vegetables in a frying pan and mix together. Add the spices and spice up to taste with hot sauce / harissa. Cut the Schnitzels in 6-8 strips. Heat oil in a frying pan and fry the strips till golden brown. Add the soy sauce, sweet soy sauce and teriyaki sauce and lower the heat and let simmer for about 5 minutes. Drain the mung beans and add to the rice with vegetables and spices and mix everything together.
